Marinate the Pork
In a large bowl, combine achiote paste, pineapple juice, minced garlic, lime juice, and salt. Mix well to form a marinade. Add the pork shoulder slices to the marinade and refrigerate for at least 2 hours, preferably overnight.

Roast the Pork
Preheat your oven to 350°F (175°C). Place the marinated pork on a baking sheet and roast in the preheated oven for about 1.5 to 2 hours, or until the pork is tender and cooked through.

Prepare the Tacos
Once the pork is done, remove it from the oven and let it rest for 10 minutes. Thinly slice the pork and warm the corn tortillas in a skillet or microwave.

Assemble the Tacos
On each warm tortilla, place a generous portion of sliced pork, top with diced pineapple, chopped cilantro, and diced onion. Serve immediately with lime wedges on the side.
