Prepare the Cajun Chicken
Season the chicken breasts with Cajun spices, salt, and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until fully cooked. Remove from the skillet and let rest before slicing.

Cook the Gnocchi
In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Drain and set aside.

Make the Garlic Cream Sauce
In the same skillet used for the chicken, add another tablespoon of olive oil over medium heat. Add minced shallots and minced garlic, sautéing until translucent, about 2-3 minutes. Add the fire roasted tomatoes and cook for an additional 3-4 minutes.

Combine Ingredients
Lower the heat and pour in the heavy cream, stirring to combine. Add the fresh spinach and allow it to wilt for about 2 minutes. Season with salt and pepper to taste. Then, add in the cooked gnocchi and sliced Cajun chicken, gently tossing to coat everything in the sauce.

Plate the gnocchi and garnish with grated Parmesan cheese before serving. Enjoy!
