Prepare the Tomato Mixture
In a large mixing bowl, combine the chopped fresh tomatoes, minced garlic, chopped basil, chopped Kalamata olives, grated Parmesan cheese, salt, and black pepper. Mix well to combine. Let the mixture sit for about 15 minutes to allow the flavors to meld.

Toast the Pita Bread
Preheat your oven to 400°F (200°C). Arrange the pita bread on a baking sheet and brush lightly with olive oil. Toast in the oven for about 5-7 minutes or until they are golden brown and crispy.

Assemble the Bruschetta
Once the pita bread is toasted, remove it from the oven and let it cool slightly. Spread a generous layer of pesto on each piece of pita bread, then top with the tomato mixture.

Serve
Serve immediately while the pita is still warm, garnished with additional basil or Parmesan if desired.
