Prepare the Ribs

Season the beef short ribs with salt and black pepper. Heat olive oil in a large pot over medium-high heat. Sear the ribs on all sides until browned, about 3-4 minutes each side. Remove and set aside.

Sauté Vegetables

In the same pot, add the chopped onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.

Deglaze the Pot

Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow the wine to reduce for about 3-4 minutes.

Add Remaining Ingredients

Add the beef broth, soy sauce, brown sugar, thyme, bay leaves, and return the short ribs to the pot. Bring to a simmer.

Braise the Ribs

Cover the pot and reduce heat to low. Let the ribs braise for 3-4 hours, or until they are tender and falling off the bone.

Serve

Remove the ribs from the pot and let rest for a few minutes. Serve hot with the braising liquid and vegetables.
