Whipped Ricotta

    Prepare ricotta base

    Place whole-milk ricotta and mascarpone in the bowl of a food processor (or a large bowl if using an electric hand mixer).

    Season and blend

    Add 2 tablespoons olive oil, lemon zest, 1 tablespoon lemon juice, 3/4 teaspoon fine sea salt, 1/4 teaspoon black pepper, and 1 teaspoon honey. Pulse or beat on medium-high until the mixture is very smooth and airy, 45–75 seconds. Scrape down the sides and blend briefly again to ensure uniform texture.

    Adjust consistency

    If the ricotta seems too thick, add up to 1 tablespoon of water or additional olive oil and pulse once to loosen. Taste and adjust seasoning with more salt, pepper, or a touch more honey if you prefer slightly sweet contrast.

    Transfer and chill briefly

    Spoon the whipped ricotta into a shallow serving bowl, smooth the top with the back of a spoon, and set aside at room temperature while you finish the saffron apricots (or chill up to 30 minutes if making ahead).

Saffron Apricots

    Bloom saffron

    Place 3 tablespoons hot water (not boiling, about 175°F/80°C) in a small heatproof bowl. Add 10 saffron threads and let steep 5–10 minutes until the water is richly colored and aromatic.

    Soak apricots

    Place 1 cup dried apricots in a small saucepan or heatproof bowl. Pour the saffron-infused water over the apricots so they are mostly covered. Let soak 10 minutes to plump; if the apricots are very dry, add an additional tablespoon of hot water.

    Poach and glaze

    Transfer the apricots and their saffron liquid to a small saucepan over medium-low heat. Add 1 tablespoon granulated sugar and 1 teaspoon unsalted butter. Gently simmer, stirring occasionally, until apricots are tender and the liquid has reduced to a slightly syrupy glaze, 6–8 minutes.

    Finish apricots

    Remove from heat. Stir in 1 teaspoon fresh lemon juice and 1/4 teaspoon flaky sea salt. Taste and, if desired, add a pinch more sugar or a few extra saffron threads for stronger aroma. Let cool slightly; the apricots should be warm but not hot when served on the ricotta.

To Serve / Garnish

    Assemble

    Arrange the whipped ricotta in its serving bowl. Spoon the warm saffron apricots and their glaze over the center of the ricotta, leaving some ricotta exposed around the edges for dipping.

    Garnish and finish

    Drizzle the finishing 1 teaspoon extra-virgin olive oil over the ricotta and apricots. Scatter 2 tablespoons toasted chopped pistachios and a pinch of flaky sea salt over the top. Add fresh thyme leaves or microgreens if using.

    Serve

    Serve immediately with toasted sliced baguette or crackers. Leftover whipped ricotta can be refrigerated in an airtight container for up to 3 days; bring to room temperature and stir before serving. Store apricots separately in the fridge for up to 4 days and warm gently before using.
