For the base (non‑alcoholic aperitif)

Method

Prepare base and glassware

  1. 1

    Chill and measure

Chill your sparkling components (non‑alcoholic sparkling wine and club soda) in the fridge until well cold. If you plan to serve individual Falso Spritzes rather than a batch, place a wine or large stemmed glass in the freezer for 5–10 minutes or fill with ice to chill while you prepare ingredients.

  2. 2

If making a batch (approximately six 6‑oz servings), measure 4 tbs non‑alcoholic bitter aperitif, 3 cups sparkling non‑alcoholic wine, and 1 cup chilled club soda into a large pitcher. For single servings, use roughly 1.5 tbs bitter aperitif, 1/2 cup sparkling wine, and 2–3 tbs club soda per glass.

Mixing and balancing

  1. 3

    Combine flavors

In the pitcher (or a mixing glass if making single drinks), add the measured non‑alcoholic bitter aperitif. Stir in the fresh orange juice (2 tbs for a batch or ~1/2 tbs per single) and the lemon juice (1 tsp per batch or a few drops per single). Add the simple syrup or agave (1 tsp for the batch) and stir until blended.

  2. 4

Taste the base mixture. The goal is a gently bitter, citrus‑bright profile. Adjust: add up to 1 more teaspoon of simple syrup if too bitter, or another teaspoon of orange juice if you want more fruit brightness. If the bitter component is too pronounced, dilute slightly with another tablespoon or two of sparkling wine.

Carbonation and serving

  1. 5

    Add sparkling components

Gently pour the chilled sparkling non‑alcoholic wine into the pitcher with the base mixture. Stir once or twice very gently to combine; avoid vigorous stirring to preserve bubbles. Finally add the chilled club soda and give one gentle stir.

  2. 6

Fill each chilled wine or stemmed glass with 1–2 large ice cubes. Pour the Falso Spritz over the ice, aiming for about 5–6 oz per glass (adjust depending on glass size).

  3. 7

    Garnish and finish

Garnish each glass with an orange wheel or slice placed on the rim or floated on top. Optionally slap a rosemary sprig between your hands to release oils and place it in the drink for aroma. Serve immediately while fizzy.
