Saffron-Infused Apricots

    Soak apricots

    Place the dried apricots in a heatproof bowl. Pour 500 ml of hot (not boiling) water over them so they are fully submerged. Cover and let soak for 25–30 minutes until plump but still holding shape. Reserve 100 ml of the soaking liquid by pouring off carefully into a separate bowl; keep warm.

    Bloom saffron

    In a small cup, crush the saffron threads lightly between your fingers, then pour 2 tablespoons of hot water over them. Let sit 10 minutes to release color and aroma.

    When apricots are plump, drain them, reserving the previously set-aside 100 ml of soaking liquid for the syrup. If some apricots are very large, halve them lengthwise; otherwise leave whole.

Syrup and Flavoring

    Make syrup

    In a medium saucepan combine 150 g granulated sugar, 150 ml water (syrup water), reserved 100 ml apricot soaking liquid, the bloomed saffron (including liquid), lemon juice, vanilla extract, cinnamon stick, cracked cardamom pods, and a pinch of salt.

    Bring the mixture to a gentle simmer over medium heat, stirring until the sugar dissolves. Once simmering, reduce heat to low and simmer gently uncovered for 6–8 minutes to concentrate slightly; the syrup should be glossy and slightly thickened but still pourable.

    Remove and discard the cinnamon stick. Taste the syrup and adjust acidity or sweetness: add up to 1 tsp more lemon juice or 1–2 tbsp more sugar if desired. Keep the syrup warm over the lowest heat setting.

    Cook apricots briefly in syrup

    Add the drained apricots to the warm saffron syrup in a single layer. Simmer gently for 4–6 minutes, turning apricots once so they soak evenly and absorb color and flavor. Do not overcook — apricots should be tender but intact.

    Turn off the heat and let apricots sit in the syrup as it cools for at least 15 minutes for deeper flavor; for best results refrigerate in the syrup for 2–4 hours or overnight to let saffron and cardamom fully infuse.

Finishes and Garnish

    If you want a glossy finish, return the saucepan to very low heat and swirl in 15 g unsalted butter until melted and incorporated into the syrup. Do not boil. This step is optional but gives a richer mouthfeel.

    Toast almonds

    While apricots rest, warm a small dry skillet over medium heat. Add 30 g slivered almonds and toast, stirring, 2–3 minutes until fragrant and lightly golden. Remove from heat and cool.

    Transfer apricots to a serving bowl or jar with some of the saffron syrup spooned over them. Sprinkle with toasted almonds, a little orange zest, and garnish with fresh mint leaves. Serve warm, at room temperature, or chilled. The preserved apricots keep refrigerated in their syrup for up to 10 days.
