Prepare fig purée
If you don't have pre-made fig purée, remove stems from 1-2 ripe figs and place in a blender or small food processor with 1 teaspoon water. Blend to a smooth purée. Strain through a fine-mesh sieve if you want a smoother texture (optional). Measure 1 oz for the recipe.

Dry shake (if using egg white)
If using the egg white for a silky foam, add Grey Goose vodka, pomegranate liqueur, fig purée, lemon juice, orange blossom water, simple syrup and the egg white to a cocktail shaker without ice. Seal and shake vigorously for 10–15 seconds to emulsify and build foam.

Wet shake
Add ice cubes to the shaker (after the dry shake, or immediately if not using egg white). Shake vigorously for 12–18 seconds until the shaker is cold to the touch. This chills and slightly dilutes the cocktail while integrating the fig purée and pomegranate.

Prepare glass
If serving over crushed ice: fill a rocks glass or short tumbler about halfway with crushed ice. If serving straight up: chill a coupe or martini glass and set aside.

Strain and serve
Double-strain the cocktail into the prepared glass using a Hawthorne strainer and a fine mesh strainer to catch fig solids and ice shards. For crushed-ice service, strain over the crushed ice. For coupe service, strain directly into the chilled glass.

Serve
Serve immediately while cold. Encourage the guest to take in the aroma of orange blossom and the bright pomegranate before sipping.
