Prep Oysters

    Chill and set bed

    Fill a large shallow platter or individual serving trays with crushed ice; smooth into an even bed to stabilize oyster shells. Keep the platter in the refrigerator while you prepare the mignonette.

    If oysters are not already shucked, shuck them carefully: hold the oyster flat side up, insert an oyster knife at the hinge, twist to open, run the blade under the top shell to free it, then cut the muscle from the bottom shell so the oyster sits loose in its half shell. Discard top shells and place each on the ice bed. Keep oysters cold until serving.

Make Barberry Mignonette

    Rehydrate barberries

    Place the dried barberries in a small bowl and cover with 2 tablespoons warm water. Let sit 8–10 minutes to plump and soften, then drain any excess liquid, reserving the plumping liquid for later use if desired.

    Combine aromatics and vinegar

    In a small mixing bowl, combine the red wine vinegar, champagne vinegar, and minced shallot. Add the optional ½ tsp sugar if you prefer a slightly mellower acidity. Stir and let sit 2–3 minutes to mellow the shallot's bite.

    Finish mignonette

    Add the rehydrated barberries (and up to 1 tsp of the reserved plumping liquid if the mixture seems too tart), olive oil, sea salt, and black pepper to the vinegar-shallot mixture. Stir to combine. Taste and adjust seasoning — add a pinch more salt or up to another ¼ tsp sugar if needed. Fold in the thinly sliced chives. Transfer the mignonette to a small serving bowl and chill for at least 10 minutes to let flavors marry.

Assemble & Serve

    Remove the oyster platter from the refrigerator. Spoon about ½ to 1 teaspoon of the barberry mignonette onto each oyster, placing it near the hinge so it rests on the oyster meat without running off. Use less for a delicate flavor, more for a pronounced fruity-vinegary note.

    Garnish lightly with a few microgreens or a small seaweed frond and a sprinkle of crispy fried shallots if using. Serve immediately with lemon wedges on the side.

    Advise guests to eat oysters raw immediately after dressing; discard any oyster that doesn't smell fresh or that appears dry or off.
