    Trim and dry

    Separate broccoli into medium-sized florets, keeping some stem attached for stability. Pat thoroughly dry with paper towels or a clean kitchen towel — excess moisture prevents good charring.

    Preheat cooking surface

    Preheat a heavy cast-iron skillet or a large stainless-steel pan over medium-high heat for 4–5 minutes until hot but not smoking. If using a grill, preheat to medium-high and oil the grates.

    Oil and season

    In a large bowl, toss the dried florets with the 3 tbsp olive oil, 1 tsp kosher salt, and 1/2 tsp black pepper until evenly coated.

    Char on stovetop or grill

    Add the broccoli to the hot skillet in a single layer (work in batches if needed). Let sit undisturbed for 3–4 minutes until the undersides develop dark brown/black charred spots. Flip florets and cook another 3–4 minutes, pressing larger pieces gently with a spatula to promote contact with the pan. Total cook time should be 7–9 minutes for tender-crisp texture with pronounced char. If using a grill, place florets directly on grates or on a grill basket and char, turning once, for similar timing.

    Finish to tenderness

    If broccoli is still too firm, lower heat to medium, cover pan loosely with a lid or tent with foil for 1–2 minutes to steam through, then remove lid and cook 1 minute more to re-char edges.

    Dress and garnish

    Transfer charred broccoli to a serving bowl while still hot. Drizzle with 1 tbsp fresh lemon juice and toss gently. Sprinkle with 2 tbsp grated or shaved Parmesan, 1/4 tsp crushed red pepper flakes, and the toasted pine nuts or chopped almonds if using.

    Taste and finish with a light dusting of flaky sea salt if desired. Serve immediately as a warm side dish.
