Base & Shell (Chocolate Truffle Shell)
Make ganache
Place chopped bittersweet chocolate in a heatproof bowl. In a small saucepan, bring heavy cream to a simmer (do not boil). Pour hot cream over chocolate and let sit 1 minute. Stir gently until glossy and smooth. Stir in unsalted butter until incorporated. Allow ganache to cool until thick but still spreadable (about 20–30 minutes at room temperature or 10–15 minutes in refrigerator, stirring once).
Form shell bowl
Line a 8x8-inch square pan (or small loaf pan) with plastic wrap leaving overhang. Spread half of the cooled ganache in an even layer (about 1/4–1/3 inch thick) across the bottom and up the sides to form a shell, reserving the rest for coating later. Freeze the pan for 15–20 minutes until firm but not rock-hard. Using the plastic wrap, lift the chocolate shell from the pan and place on a sheet of parchment. Lightly dust interior with cocoa powder if desired.
Filling - Traditional (vanilla)
Prepare vanilla filling
Combine whole milk, heavy cream, and granulated sugar in a saucepan over medium heat. Stir until sugar dissolves and mixture is hot but not boiling. Remove from heat and stir in vanilla extract and mascarpone until smooth. Chill the mixture completely in the refrigerator (about 1 hour) until cool.
Freeze filling
Pour the chilled vanilla mixture into a shallow container (so it freezes quickly) and place in the freezer. After 45–60 minutes, break any ice crystals with a fork and return to freezer. Repeat every 30 minutes until mixture is scoopable and firm but still creamy (about 2–3 hours total) — or use an ice cream maker per manufacturer's instructions and chill till firm enough to scoop.
Portion
Once the filling is scoopable, form 12 small balls (about 1.5–2 tablespoons each). Press one cherry into the center of each ball, folding the filling around the cherry so the fruit is fully enclosed. Refreeze the filled centers on a parchment-lined tray until solid (about 1 hour).
Filling - Pistachio (alternative)
Prepare pistachio filling
Combine whole milk, heavy cream, and granulated sugar in a saucepan over medium heat until sugar dissolves and mixture is hot but not boiling. Remove from heat and whisk in pistachio paste until fully incorporated. Add a drop of green food coloring if desired and stir. Chill completely in refrigerator (about 1 hour).
Freeze pistachio filling
Freeze in a shallow container, breaking up ice crystals every 30–45 minutes until scoopable, or churn in an ice cream maker. Once firm enough to shape, form 12 balls, press a cherry into each, encase fully, and refreeze on a parchment-lined tray until solid (about 1 hour).
Assembly & Coating
Assemble truffles
Place one frozen filled center into the prepared chocolate shell. If using multiple truffles rather than one large shell, spoon reserved ganache into a piping bag and fill small silicone molds halfway, add frozen center, then top with more ganache to seal. Tap to remove air pockets. Freeze until very firm (30–45 minutes).
Coat & finish
Remove firm truffles from molds or unmold the larger shell. Roll or press the outer surface into your chosen coating: finely chopped pistachios for the pistachio version or chopped hazelnuts/cookie crumbs for the traditional version. For a classic look, dust lightly with cocoa powder or sift powdered sugar over the finished truffle. Return to freezer for 10–15 minutes to set coating if needed.
Serve
Allow truffles to sit at room temperature 5–10 minutes before serving so the ganache softens slightly. Keep stored in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 1 month (thaw in fridge before serving).
