Method
Classic Margarita
Prepare glass
Rub a lime wedge around the rim of a rocks or coupe glass. Dip the rim in coarse salt to coat. Set glass aside.
Shake
Add blanco tequila (2 oz), fresh lime juice (1 oz), triple sec (1 oz), simple syrup (1/2 oz) and a generous handful of ice to a cocktail shaker. Seal and shake vigorously for 10–15 seconds until well chilled.
Whiskey Sour
Dry shake (if using egg white)
If using egg white, add bourbon (2 oz), lemon juice (3/4 oz), simple syrup (3/4 oz), and egg white (1/2 egg) to a shaker without ice. Dry shake vigorously for 15 seconds to emulsify and build foam.
Wet shake
Add ice to the shaker and shake again for 10–15 seconds until chilled. If not using egg white, add all ingredients to the shaker with ice and shake until well chilled.
Strain and garnish
Double-strain into an old-fashioned glass over fresh ice. Add 2 dashes angostura bitters on the foam (if present) and garnish with a lemon twist or a maraschino cherry.
Mojito
Muddle
In a highball glass, gently muddle the mint leaves (8 leaves) with simple syrup (3/4 oz) and fresh lime juice (3/4 oz). Press just enough to release fragrant oils without shredding the mint.
Build
Fill the glass with crushed ice. Add white rum (2 oz) and stir briefly to lift the mint through the drink.
Old Fashioned
Sweeten and bitters
In a rocks glass, add simple syrup (1/4 oz) and 3 dashes angostura bitters. If using a sugar cube, saturate and muddle it with the bitters.
Add spirit and ice
Add rye or bourbon (2 oz) and one large ice cube. Stir gently for 20–30 seconds to chill and dilute slightly.
Express and garnish
Express the oils of an orange peel over the glass by holding it skin-side down and giving it a good twist, then rub the rim and drop it in. Serve.
