Noodles & Sauce
Boil noodles
Bring 2 liters of water to a rolling boil in a large pot. Add a pinch of salt and the dried noodles. Cook according to package directions until just tender (al dente), usually 6–8 minutes. Reserve 1 cup of the starchy cooking water or stock, then drain the noodles and toss lightly with 1 teaspoon neutral oil to prevent sticking. Set aside.
Prepare sauce base
Peel and finely mince the garlic (3 cloves) and grate or finely mince the ginger (1 tablespoon). In a small bowl combine red chili paste (2 tbs), chili oil (1 tsp), soy sauce (2 tbs), dark soy (1 tsp), rice vinegar (1 tsp), sesame oil (1 tsp), and brown sugar (1 tsp). Stir to combine.
Finish sauce in pan
Heat 1 tablespoon neutral oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger and stir-fry 30–45 seconds until fragrant but not browned. Add the mixed sauce and stir for 20 seconds to bloom the flavors. Pour in 1 cup stock or reserved noodle water and bring to a simmer. Mix 1 teaspoon cornstarch with 1 tablespoon cold water until smooth, then whisk into the simmering sauce. Cook 1–2 minutes until slightly thickened and glossy. Taste and adjust: add more chili paste for heat, more sugar for sweetness, or more soy for saltiness.
Toss noodles with sauce
Add the drained noodles to the skillet and toss thoroughly to coat in the sauce. If sauce feels too thick, add a splash of reserved noodle water, 1–2 tablespoons at a time, until you reach a glossy, clingy consistency. Keep the noodles over low heat while you finish the eggs and chicken so everything is hot.

Prepare grilled chicken
If not already warm, roughly chop the grilled chicken into bite-size pieces (about 1/2-inch). To reheat and add a touch of char, heat a small nonstick skillet over medium-high heat, add a teaspoon of oil, and quickly sear the chopped chicken 1–2 minutes until hot and slightly caramelized. Remove from heat and set aside.
Scramble eggs
Crack 3 large eggs into a bowl, add 1 tablespoon milk or water, 1/2 teaspoon salt and 1/2 teaspoon black pepper, then whisk until blended and slightly frothy. Heat 1 tablespoon butter or oil in a clean nonstick skillet over medium heat until shimmering. Pour in the eggs and allow them to sit undisturbed for 8–10 seconds, then gently stir with a silicone spatula, forming soft curds. Cook until eggs are just set but still moist, about 1–2 minutes total. Remove from heat immediately to prevent overcooking.
Combine proteins with noodles
Fold the chopped grilled chicken and scrambled eggs into the sauced noodles in the large skillet. Toss gently to distribute evenly, keeping the egg in soft curds and the chicken warmed through. Taste and adjust seasoning (salt, pepper, or extra soy/chili) as needed.
Aromatics & Garnish
Thinly slice 3 scallions on a diagonal. Chop cilantro if using. Plate the spicy hangover noodles into shallow bowls. Scatter the sliced scallions and cilantro over the top. Sprinkle toasted sesame seeds and crushed red pepper flakes if you want extra heat. Serve with lime wedges on the side for squeezing over just before eating and optional chopped pickles or kimchi on the side for acidity and contrast.
Serving & Tips
Serve immediately while hot. To make it quicker next time: use pre-cooked rotisserie chicken and premade chili sauce. For a creamier version, stir in 1–2 tablespoons of soft butter or a splash of heavy cream at the end. Adjust spiciness by reducing chili paste and using more chili oil or flakes to taste.
