Chill and prepare

Place the non-alcoholic sparkling wine (or sparkling grape juice), white grape juice, and club soda in the refrigerator until very cold (at least 1 hour). Prepare simple syrup ahead of time and chill, or use store-bought.

Mix juice base

In a large pitcher, combine the chilled white grape juice (1 cup), chilled simple syrup (1 tbs), fresh lemon juice (2 tsp), fresh orange juice (2 tsp), and 2 dashes of non-alcoholic bitters or orange extract. Stir gently to merge. Taste and adjust sweetness by adding up to 1 tsp more simple syrup if desired.

Assemble with sparkling components

Add 1 cup chilled club soda to the juice base and stir once to combine. Slowly pour in the chilled non-alcoholic sparkling wine (1 bottle) down the side of the pitcher to preserve bubbles, gently fold with a spoon 3–4 times. Do not vigorously stir to keep effervescence.

Prepare serving glasses

Fill four wine or flute glasses with about 1/2 cup ice each (roughly 2 cups total divided among glasses). If you prefer fully chilled without ice, skip the ice and chill glasses instead.

Serve

Divide the sparkling mixture evenly among the four glasses, pouring slowly to avoid overflow. Garnish each glass with an orange wheel and a mint sprig. If using alcoholic bitters substitute, use sparingly to maintain non-alcoholic profile.

Optional variations & notes

For a drier profile, reduce simple syrup to 1/2 tbs. For a fruitier version, add 1/4 cup raspberry or peach puree to the juice base and stir before adding sparkling wine. Use non-alcoholic Aperitif syrups (e.g., non-alc Aperol alternatives) for a closer Mionetto aperitivo flavor; if using, reduce grape juice by 1/4 cup.
