Preheat

Preheat the oven to 425°F (220°C). Position a rack in the center. Place a baking sheet large enough for the ramekins on the rack to catch drips and for easier handling.

Melt chocolate and butter

In a heatproof bowl set over (not touching) simmering water (double boiler) or in short bursts in the microwave (20–30 seconds, stirring between bursts), combine the chopped bittersweet chocolate and the 1/2 cup unsalted butter. Stir until completely melted and smooth. Remove from heat and let cool for 2–3 minutes.

Whisk eggs and sugar

In a separate medium bowl, whisk together the 2 large eggs, 2 large egg yolks, and 3/4 cup granulated sugar until the mixture is pale, slightly thickened, and sugar is mostly dissolved (about 1–2 minutes by hand or 30–45 seconds with a hand mixer).

Combine

Slowly pour the melted chocolate-butter mixture into the egg-sugar mixture while whisking continuously to temper the eggs and achieve a smooth, glossy batter. Add 1 tsp vanilla extract and 1/8 tsp kosher salt; whisk to combine.

Fold in flour

Sift in 1/3 cup all-purpose flour and gently fold with a rubber spatula just until no streaks of flour remain. Do not overmix — a slightly thick, pourable batter is desired.

Ramekin Preparation & Baking

Prepare ramekins

Generously butter four 6-ounce (or similar size) ramekins with the 1 tablespoon butter, making sure to coat the bottom and sides. Dust the inside with cocoa powder, tapping out excess. Place the prepared ramekins on the lined baking sheet.

Portion batter

Divide the batter evenly among the four prepared ramekins, filling each about three-quarters full (roughly 5–6 tablespoons per ramekin). Smooth the tops with the back of a spoon or offset spatula.

Chill briefly (optional)

For neater edges and easier handling, chill the filled ramekins in the refrigerator for 10–15 minutes; this step is optional but helps the cakes set slightly so they release cleanly.

Bake

Bake on the center rack at 425°F (220°C) for 12–14 minutes. The edges should be set and firm while the centers remain soft and slightly jiggly. Oven times vary; start checking at 11 minutes if your oven runs hot.

Rest

Remove the ramekins from the oven and let them rest for 1 minute on a cooling rack. This brief rest helps prevent the molten center from running out too easily when unmolding.

Unmold

Run a thin knife around the inside edge of each ramekin to loosen the cake. Place a small dessert plate over each ramekin, invert, and tap gently to release the cake. If the cake resists, warm the bottom of the ramekin briefly with a kitchen torch or dip the ramekin base in warm water for a second, then invert again.

To Serve & Garnish

Place the inverted cake centrally on the dessert plate. Dust the top lightly with powdered sugar (optional) and arrange a scoop of vanilla ice cream beside or on top of the warm lava cake so the heat melts the ice cream slightly, creating a sauce-like effect.

Add fresh berries on the side or a small mint leaf for color, if using. Serve immediately while the center is molten.
