Prepare the Veal
Preheat your oven to 375°F (190°C). Take the veal cutlets and pound them to an even thickness of about 1/2 inch. This ensures they cook evenly.

Set Up Breading Station
In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs mixed with grated Parmesan cheese. Add salt, black pepper, garlic powder, and oregano to the breadcrumbs for seasoning.

Bread the Veal
Dredge each veal cutlet first in the flour, shaking off the excess. Then dip into the beaten eggs, allowing any excess to drip off, and finally coat with the breadcrumb mixture, pressing down to adhere.

Fry the Cutlets
In a large skillet, heat olive oil over medium heat. Add the breaded veal cutlets in batches (don’t overcrowd the pan) and fry until golden brown on both sides, about 3-4 minutes per side. Place fried cutlets on a paper towel-lined plate to drain.

Layer the Ingredients
In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer the fried veal cutlets on top of the sauce, then cover each cutlet with additional marinara sauce. Sprinkle the shredded mozzarella cheese evenly over the top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil if desired. Serve hot with pasta or a side salad.
