Steak Preparation

    Marinate the Steak

    In a bowl, combine olive oil, balsamic vinegar, minced garlic, chopped rosemary, salt, and black pepper. Place the skirt steak in the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and let excess drip off. Grill or sear the steak for 3-4 minutes per side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing.

    Fry the Eggs

    In a non-stick skillet, melt butter over medium heat. Crack the organic eggs into the skillet, being careful not to break the yolks. Cook for 3-4 minutes, or until the whites are fully set and the yolks are cooked to your preference. Season with salt and pepper.

Preparing the Salad

    Assemble the Salad

    In a bowl, place the baby arugula. You can drizzle a little olive oil and balsamic vinegar for dressing if desired, but this is optional.

    Prepare the Potatoes

    Peel the potatoes and cut them into thin strips to make fries. Rinse them in cold water to remove excess starch, then pat dry with a paper towel.

    Fry the Potatoes

    In a deep pot, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels, then season with salt to taste.
