Roasted Potatoes

Prepare and Roast the Potatoes
Preheat the oven to 400°F (200°C). Toss the halved baby potatoes with olive oil, salt, and black pepper in a large bowl. Spread them out evenly on a baking sheet and roast for 25-30 minutes, or until golden brown and tender, flipping halfway through.
Sautéed Spinach and Seafood

Sauté the Spinach
In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 3-4 minutes. Remove the spinach from the skillet and set aside.

Prepare the Sauce

Make the White Wine Sauce
In the same skillet, pour in the white wine and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Allow it to reduce by half, about 5-7 minutes. Return the shrimp, scallops, and sautéed spinach to the skillet, toss to coat in the sauce, and cook for an additional 2 minutes.
