Spicy Braised Chicken

Prepare the Chicken
Season the chicken thighs with salt and black pepper on both sides.

Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken thighs and sear for about 5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Add Liquids
Pour in the chicken broth and red wine vinegar, scraping the bottom of the skillet to release any browned bits.

Braise the Chicken
Return the chicken thighs to the skillet. Cover and reduce the heat to low. Simmer for about 30 minutes, until the chicken is tender and fully cooked.

Finish with Parsley
Before serving, stir in chopped fresh parsley to the braised chicken.
Home-Made Polenta

Boil Water
In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt.

Add Polenta
Gradually whisk in 1 cup of polenta, stirring constantly to prevent lumps.

Cook Polenta
Reduce heat to low and cook the polenta for about 20-25 minutes, stirring frequently, until thickened and creamy.

Add Butter and Cheese
Remove from heat and stir in 2 tbs of butter and 1 cup of parmesan cheese until melted and well combined.
