Preparation
- 1
Prepare the shrimp
Rinse the shrimp under cold water and pat dry with paper towels. Season with salt and black pepper. Set aside.
- 2
Set up the breading station
In three separate shallow dishes, place the flour in one, beaten eggs in another, and breadcrumbs mixed with grated Parmesan cheese in the third.
Cooking
- 3
Bread the shrimp
Dredge each shrimp in the flour, shaking off the excess. Dip into the beaten eggs, then coat with the breadcrumb mixture. Place the breaded shrimp on a baking sheet.
- 4
Fry the shrimp
In a large skillet, heat olive oil over medium heat. Add the breaded shrimp in batches and cook for 2-3 minutes on each side until golden brown. Remove and place on paper towels to drain excess oil.
- 5
Assembly
- 6
Layer the shrimp
Preheat the oven to 375°F (190°C). In a baking dish, spread a layer of the tomato sauce, then arrange the fried shrimp on top. Pour more sauce over the shrimp.
- 7
Add cheese
Sprinkle shredded mozzarella cheese evenly over the top of the shrimp and sauce.
- 8
Bake
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
- 9
Garnish and serve
Remove from the oven, garnish with fresh basil leaves, and serve hot.
