Preparation

  1. 1

    Prepare the Shrimp

In a mixing bowl, season the peeled and deveined shrimp with salt and black pepper. Set aside.

  2. 2

    Make the Batter

In a shallow dish, whisk together the flour and eggs until well combined. Add a pinch of salt and pepper to the mixture.

Cooking

  1. 3

    Coat the Shrimp

Dredge each shrimp in the batter, ensuring they are fully coated. Shake off any excess flour.

  2. 4

    Fry the Shrimp

In a large skillet over medium heat, heat the olive oil. Once hot, add the coated shrimp in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown. Remove and place on a paper towel to drain.

  3. 5

    Prepare the Sauce

In the same skillet, reduce the heat to low and add the butter. Once melted, add the minced garlic and sauté for 30 seconds until fragrant. Then, add the lemon juice and chicken broth, stirring to combine.

  4. 6

    Combine Shrimp and Sauce

Return the fried shrimp to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until heated through.

  5. 7

    Garnish and Serve

Sprinkle with chopped parsley before serving. Serve immediately with lemon wedges on the side.
