Preparation of Base

    Heat Dairy Mixture

    In a medium saucepan, combine the whole milk and heavy cream. Place over medium heat and warm until just beginning to steam, but do not let it boil.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is thick and pale in color.

    Combine Mixtures

    Gradually pour the warm milk and cream mixture into the egg yolk mixture, whisking continuously to temper the eggs. Once combined, return the mixture to the saucepan.

    Cook the Mixture

    Cook the mixture over medium heat, stirring constantly with a wooden spoon, until it thickens enough to coat the back of the spoon, about 5-7 minutes.

    Remove the saucepan from heat and stir in the vanilla extract.
