Sauté the Spinach
In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Cook the Spinach
Add fresh spinach to the skillet and sauté for about 3-4 minutes until wilted. Season with a pinch of salt and remove from heat.
Hollandaise Sauce Preparation

Prepare the Sauce Base
In a heatproof bowl, whisk together egg yolks and lemon juice until pale and frothy.

Heat the Butter
Melt the unsalted butter in a saucepan over low heat until just melted.

Combine Ingredients
Slowly drizzle the melted butter into the egg mixture while whisking continuously until the sauce is thickened. Season with salt and cayenne pepper.
Roasted Potatoes Preparation

Prepare the Potatoes
Preheat the oven to 425°F (220°C). In a bowl, toss halved baby potatoes with olive oil, salt, black pepper, and chopped rosemary.

Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until golden brown and tender.
