Method

Salmon Preparation

  1. 1

    Prepare the Marinade

In a small bowl, mix together the olive oil, fresh rosemary, lemon juice, salt, and black pepper to create the marinade.

  2. 2

    Marinate the Salmon

Place the wild salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes in the refrigerator.

Roasted Potatoes Preparation

  1. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 4

    Prepare the Potatoes

Wash and halve the baby potatoes. In a large bowl, toss them with olive oil, fresh rosemary, garlic powder, salt, and black pepper.

  3. 5

    Roast the Potatoes

Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.

Sauteed Spinach Preparation

  1. 6

    Prepare the Spinach

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

  2. 7

    Cook the Spinach

Add the fresh spinach to the skillet. Cook, stirring frequently, for about 3-5 minutes until wilted. Season with salt and black pepper.

Cooking the Salmon

  1. 8

    Cook the Salmon

Heat a grill pan or skillet over medium-high heat. Remove the salmon from the marinade and cook for 4-5 minutes per side, or until cooked through and flaky.

Plating

  1. 9

    Serve the Dish

On a plate, arrange a portion of roasted potatoes, a serving of sautéed spinach, and a salmon fillet. Drizzle with any remaining marinade if desired.
