Method
Prepare the Pork Chops

Season the Pork Chops
Pat dry the pork chops with paper towels. Season both sides with salt and black pepper.

Sear the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until browned. Remove from the skillet and set aside.
Cook the Sausage and Peppers

Cook the Sausage
In the same skillet, add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes.

Add Spices and Broth
Stir in the crushed red pepper flakes and chicken broth, and return the seared pork chops to the skillet. Bring to a simmer.
Roast the Potatoes & Vegetables

Prepare the Vegetables
Preheat the oven to 400°F (200°C). In a bowl, toss the baby potatoes, sliced carrots, and zucchini with olive oil, dried oregano, salt, and black pepper.

Roast the Vegetables
Spread the vegetables on a baking sheet in a single layer and roast in the oven for 25-30 minutes, or until tender and golden brown.
Combine & Serve

Finish the Dish
Once the pork chops are cooked through (about 10 minutes in the skillet), and the roasted vegetables are ready, serve the pork chop scarpariello with a generous spoonful of sausage and peppers on top.

Garnish with fresh parsley if desired and serve alongside the roasted potatoes and vegetables.
