Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dough

In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and pour in the yeast mixture along with olive oil. Mix until a dough starts to form.

  3. 3

    Knead Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm area for about 1-2 hours, or until doubled in size.

Toppings Preparation

  1. 5

    Prepare Sauce

While the dough is rising, crush the San Marzano tomatoes by hand in a bowl and season with salt to taste.

  2. 6

    Prepare Cheese

Tear the fresh mozzarella cheese into small pieces and set aside.

  3. 7

    Prepare Basil

Rinse and dry the fresh basil leaves.

Assembling and Baking

  1. 8

    Preheat Oven

Preheat your oven to its highest setting (usually around 475°F or 245°C) and place a pizza stone inside if available.

  2. 9

    Shape Dough

Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into 2 equal portions and shape each into a round disk about 10-12 inches in diameter.

  3. 10

    Add Sauce and Toppings

Spread a thin layer of the crushed tomato sauce over the base of each pizza. Distribute the torn mozzarella pieces evenly on top, and add fresh basil leaves.

  4. 11

    Drizzle with Olive Oil

Drizzle the extra virgin olive oil over the top of the pizzas.

  5. 12

    Bake Pizza

Carefully transfer the pizza onto the hot pizza stone or baking sheet and bake for about 8-10 minutes, or until the crust is golden and the cheese is bubbling.

  6. 13

    Serve

Remove the pizza from the oven, let it cool for a minute, slice, and serve hot.
