Method

Cooking the Pasta

  1. 1

    Boil the Penne

In a large pot of boiling salted water, add the penne pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

  2. 2

    Drain the Pasta

Once cooked, drain the pasta in a colander and set aside, reserving a small cup of pasta water.

Making the Sauce

  1. 3

    Cook the Sausage

In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned and cooked through, about 5-7 minutes.

  2. 4

    Add Garlic and Spices

Add the minced garlic and red pepper flakes to the skillet. Sauté for an additional 1-2 minutes until fragrant.

  3. 5

    Add Tomato Sauce

Pour in the tomato sauce, stirring to combine. Season with salt and black pepper to taste. Let the sauce simmer for about 5 minutes.

Combining

  1. 6

    Mix Pasta and Sauce

Add the drained penne to the skillet with the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

Serving

  1. 7

    Plate the Dish

Serve the penne arrabbiata in bowls, topped with a generous dollop of ricotta cheese.
