Preparation of Eggplant

    Slice the Eggplant

    Wash the eggplants and slice them into 1/2-inch thick rounds.

    Salt the Eggplant

    Sprinkle salt on both sides of the eggplant slices and let them sit for about 30 minutes to draw out moisture.

    Rinse and Pat Dry

    Rinse the salted eggplant slices under cold water and pat them dry with paper towels.

Breading Process

    Prepare Breading Station

    In three separate shallow bowls, set up your breading station: one with flour, one with beaten eggs, and one with bread crumbs mixed with salt and black pepper.

    Bread the Eggplant

    Dredge each eggplant slice first in flour, then dip in the beaten eggs, and finally coat with bread crumbs. Ensure each slice is evenly coated.

Cooking

    Fry the Eggplant

    In a large skillet, heat the olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Layer the Dish

    Preheat your oven to 180°C (350°F). In a baking dish, spread a layer of marinara sauce on the bottom. Add a layer of fried eggplant, followed by slices of mozzarella, and a sprinkle of Parmesan cheese. Repeat the layers until all ingredients are used, finishing with a layer of marinara and cheese on top.

    Bake

    Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

    Remove from the oven, let it cool for a few minutes, and garnish with fresh basil leaves before serving.
