Method

Pasta Preparation

  1. 1

    Cook the Linguine

In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente, typically about 8-10 minutes.

  2. 2

    Reserve Pasta Water

Before draining the pasta, reserve about 1 cup of the pasta cooking water. Then, drain the linguine and set aside.

Clams and Sauce

  1. 3

    Clean the Clams

Rinse the manila clams under cold water, scrubbing the shells with a brush to remove any dirt or sand. Discard any clams that are open and do not close when tapped.

  2. 4

    Sauté Garlic

In a large skillet or pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until it becomes fragrant but not browned.

  3. 5

    Add Clams and Wine

Add the cleaned clams to the skillet along with the dry white wine and red pepper flakes. Cover the pan and cook for about 5-7 minutes, or until the clams open up.

  4. 6

    Combine Pasta and Sauce

Once the clams have opened, add the cooked linguine to the skillet. Toss everything gently, adding reserved pasta water as needed to create a light sauce.

  5. 7

    Season and Serve

Stir in the chopped fresh parsley and season with black pepper to taste. Serve immediately in bowls, ensuring each serving has plenty of clams and sauce.
