Method
Prepare the Grits (Polenta)

Boil Water
In a large pot, bring 4 cups of water to a boil. Add salt.

Add Polenta
Gradually whisk in 1 cup of polenta, stirring continuously to prevent lumps.

Cook Polenta
Reduce the heat to low and cook for about 20-25 minutes, stirring occasionally until thickened.

Add Cheeses and Butter
Remove from heat and stir in Fontina cheese, Parmesan cheese, and butter until melted and smooth.
Cook the Shrimp and Bacon

Cook Bacon
In a large skillet over medium heat, add diced bacon and cook until crispy, about 5-7 minutes.

Cook Shrimp
Stir in the shrimp, paprika, salt, and pepper. Cook until the shrimp are pink and opaque, about 4-5 minutes.
Poach the Eggs

Prepare Water
Bring a pot of water to a gentle simmer and add white vinegar.

Poach Eggs
Crack each egg into a small bowl, then gently slide the eggs into the simmering water. Cook for 3-4 minutes until the whites are set.

Remove the eggs with a slotted spoon and drain on paper towels.
