    Hard-Boil the Eggs

    Place the eggs in a saucepan and cover them with water. Bring to a boil over high heat. Once boiling, cover the pot, remove from heat, and let sit for 9-12 minutes. Afterward, transfer eggs to an ice bath to cool, then peel and quarter.

    Cook the Potatoes

    In a pot of salted water, add the baby potatoes. Bring to a boil and cook for about 15 minutes or until fork-tender. Drain and let cool before cutting them in half.

    Prepare the Green Beans

    Trim the ends of the green beans and blanch them in boiling water for about 3-4 minutes until bright green and tender-crisp. Immediately transfer to an ice bath to stop the cooking process. Drain and set aside.

    Prepare the Red Onion

    Thinly slice the red onion and soak in cold water for about 10 minutes to mellow the flavor. Drain before adding to the salad.

    Prepare the Grape Tomatoes

    Wash the grape tomatoes and cut them in half.

    Pit and slice the black olives if needed.

Grilling the Salmon

    Grill the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper. Grill the salmon skin-side down for about 6-8 minutes, then flip and grill for an additional 4-6 minutes or until cooked through and flakes easily with a fork. Remove from grill and let rest.

    In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until emulsified.

Assembling the Salad

    In a large bowl, combine the green beans, potatoes, grape tomatoes, olives, red onion, and quartered eggs. Drizzle with the dressing and toss gently to combine.
