Grilled Chicken
Method
Cooking Gnocchi

Boil Water
Fill a large pot with water, add 1 tsp of salt, and bring it to a boil.

Cook Gnocchi
Add the potato gnocchi to the boiling water and cook according to package instructions, usually around 2-3 minutes until they float to the surface. Once cooked, drain and set aside.

Sauté Gnocchi
In a large skillet, heat 2 tbs of olive oil over medium heat. Add the cooked gnocchi and sauté for about 5 minutes until they are slightly golden and crispy.
Making Pesto Sauce

Blend Ingredients
In a food processor, combine the fresh basil leaves, pine nuts, garlic cloves, and grated Parmesan cheese. Pulse until everything is finely chopped.

Add Olive Oil
With the food processor running, slowly drizzle in 1 cup of extra virgin olive oil until the mixture is smooth and creamy. Season with 1 tsp of salt and 1 tsp of black pepper. Blend again to combine.
Grilling Chicken

Prepare Chicken
Season the chicken breasts with 2 tbs of olive oil, 1 tsp of salt, and 1 tsp of black pepper.

Grill Chicken
Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes per side, or until fully cooked and juices run clear. Remove from grill and let rest for 5 minutes before slicing.
Combining Ingredients

Mix Gnocchi and Pesto
In a large bowl, combine the sautéed gnocchi with the prepared pesto sauce. Toss gently until the gnocchi is well coated.

Serve
Divide the pesto gnocchi onto plates. Top with sliced grilled chicken and garnish with additional Parmesan cheese and basil leaves if desired.
