Method
Crust Preparation
- 1
Preheat Oven
Preheat your oven to 325°F (163°C).
- 2
Mix Crust Ingredients
In a mixing bowl, combine 1.5 cups of graham cracker crumbs, 0.5 cups of granulated sugar, and 0.5 cups of melted unsalted butter. Mix until well combined.
- 3
Form Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.
- 4
Pre-bake Crust
Bake the crust in the preheated oven for 10 minutes. Remove and let cool while preparing the filling.
Cheesecake Filling Preparation
- 5
Mix Cream Cheese
In a large mixing bowl, beat 16 oz of softened cream cheese with 1 cup of granulated sugar until smooth and creamy.
- 6
Add Sour Cream and Vanilla
Add 0.5 cups of sour cream and 1 tsp of vanilla extract to the cream cheese mixture. Mix until well combined.
- 7
Incorporate Eggs
Add 3 large eggs one at a time, mixing well after each addition. Ensure the mixture is smooth.
- 8
Add Heavy Cream
Stir in 0.25 cups of heavy cream until just combined.
- 9
Pour Filling into Crust
Pour the cheesecake filling over the pre-baked crust, smoothing the top with a spatula.
- 10
Bake Cheesecake
Bake the cheesecake in the oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- 11
Chill Cheesecake
Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.
Topping Preparation
- 12
Prepare Topping
Before serving, sprinkle 0.25 cups of granulated sugar evenly over the top of the chilled cheesecake.
- 13
Caramelize Sugar
Using a kitchen torch, carefully caramelize the sugar until it melts and forms a crispy top. Alternatively, you can place the cheesecake under a broiler for a few minutes, watching closely to prevent burning.
- 14
Serve
Allow the caramelized top to cool slightly before slicing and serving the cheesecake.
