Prepare the Chicken
Start by placing the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to about 1/2 inch thickness. This ensures even cooking.

Coat the Chicken
In one bowl, add the all-purpose flour, salt, and black pepper. In another bowl, beat the eggs and mix in the Parmesan cheese. Dip each chicken breast first into the flour mixture, shaking off any excess, then into the egg mixture, ensuring they are well coated.

Heat the Pan
In a large skillet over medium heat, add the olive oil and half of the butter. Allow the butter to melt and the oil to heat up.

Cook the Chicken
Once the oil is hot, carefully add the coated chicken breasts to the skillet. Cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Make the Sauce
In the same skillet, add the chicken broth and fresh lemon juice. Scrape the bottom of the skillet to release any browned bits. Let the sauce simmer for about 3-4 minutes, reducing slightly.

Return the chicken to the skillet, adding the remaining butter and fresh parsley. Let it cook for an additional 2 minutes, allowing the chicken to absorb the flavors of the sauce.
