Calamari Preparation

Prepare the Calamari
In a large bowl, combine the cleaned calamari rings with salt, black pepper, garlic powder, and paprika. Toss to coat evenly.

Prepare the Coating
In another bowl, mix the all-purpose flour and cornstarch together. This will be the coating for the calamari.

Coat the Calamari
Take the seasoned calamari rings and dredge them in the flour-cornstarch mixture until fully coated. Shake off excess flour.

Heat the Oil
In a deep pot or large skillet, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown. Make sure not to overcrowd the pan.

Drain the Calamari
Using a slotted spoon, remove the fried calamari and place them on a plate lined with paper towels to absorb excess oil.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Bring the sauce to a simmer.

Finish the Sauce
Let the sauce simmer for about 15-20 minutes to allow the flavors to meld. Stir in the chopped fresh basil just before serving.
