Cooking Pasta

Boil Water
In a large pot, bring salted water to a boil over high heat.

Cook Bucatini
Add the bucatini pasta to the boiling water and cook according to package instructions until al dente, usually about 9-12 minutes.

Reserve Pasta Water
Before draining, reserve 1 cup of the pasta water, then drain the pasta and set aside.
Making the Sauce

Cook Pancetta
In a large skillet over medium heat, add the diced pancetta and cook until it is crispy, about 5-7 minutes.

Add Cream
Pour in the heavy cream and stir to combine. Bring to a gentle simmer for about 2-3 minutes.

Combine Pasta and Sauce
Add the cooked bucatini to the skillet and toss to coat the pasta in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Add Cheese and Season
Stir in the shaved Parmesan cheese and season with black pepper and salt to taste. Mix well until the cheese has melted and the pasta is well-coated.
Serving

Plate the Pasta
Serve the Bucatini Carbonara immediately, garnished with additional shaved Parmesan and freshly ground black pepper if desired.
