Preparation

    Season the Short Ribs

    Generously season the beef short ribs with salt and black pepper on all sides. Let them sit at room temperature for about 30 minutes.

    Chop Vegetables

    While the ribs are resting, chop the carrots, onion, and celery into small pieces. Mince the garlic cloves.

Cooking

    Brown the Ribs

    In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Add the seasoned short ribs and sear them on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add the chopped carrots, onion, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.

    Deglaze the Pot

    Pour in the red wine and use a wooden spoon to scrape any browned bits off the bottom of the pot. Let it simmer for about 2-3 minutes.

    Add Broth and Herbs

    Return the short ribs to the pot. Add the beef broth, thyme, and bay leaves. Bring the mixture to a boil.

    Braise the Ribs

    Once boiling, reduce the heat to low, cover, and let simmer for 2.5 to 3 hours, or until the ribs are fork-tender. Check occasionally and add more broth if necessary.

Serving

    Serve

    Remove the short ribs from the pot and let them rest for about 10 minutes. Serve warm with the braising liquid and vegetables over mashed potatoes or polenta.
