Preparing the Lamb Chops

Marinate the Lamb Chops
In a small bowl, combine olive oil, chopped fresh rosemary, minced garlic, salt, and black pepper. Rub this mixture all over the baby lamb chops and let them marinate for at least 30 minutes at room temperature.

Preheat your grill to medium-high heat, ensuring it's ready for the lamb chops.

Place the marinated lamb chops on the grill, cooking for about 3-4 minutes on each side for medium-rare. Adjust the time according to your preferred doneness.

In a small saucepan, combine balsamic vinegar and honey. Bring to a boil over medium heat, then reduce to a simmer and cook until the mixture thickens, about 10-15 minutes. Remove from heat and let it cool slightly.

In a large bowl, combine arugula, halved cherry tomatoes, grated Parmesan cheese, lemon juice, salt, and olive oil. Toss well to combine.
