Prepare Rice Mixture

Cook the Arborio Rice
In a saucepan, bring the chicken or vegetable broth to a boil. Add arborio rice, reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let cool slightly.

Combine Rice and Seasonings
In a large bowl, mix the cooked rice, sautéed onion and garlic, grated Parmesan cheese, beaten egg, salt, and black pepper until well combined. Let the mixture cool to room temperature.

Add Peas
Stir in the frozen peas and cook for an additional 2-3 minutes until warmed through. Remove from heat and let cool.

Add Stracciatella
Once the meat and pea mixture has cooled, stir in the stracciatella cheese until well combined.
Form Arancini

Shape the Rice Balls
Take a handful of the rice mixture and flatten it in your palm. Place a spoonful of the meat and pea filling in the center, then mold the rice around the filling to form a ball. Repeat until all the mixture is used.

Bread the Arancini
Roll each rice ball in flour, dip into the beaten eggs, and coat with breadcrumbs, ensuring they are well covered.

Fry the Arancini
Carefully add the breaded rice balls to the hot oil in batches, frying until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.
