Prepare Rice Mixture

    Cook the Arborio Rice

    In a saucepan, bring the chicken or vegetable broth to a boil. Add arborio rice, reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let cool slightly.

    Sauté Aromatics

    In a skillet, heat a drizzle of olive oil over medium heat. Add chopped onion and garlic, and sauté until translucent and fragrant, about 3-4 minutes.

    Combine Rice and Seasonings

    In a large bowl, mix the cooked rice, sautéed onion and garlic, grated Parmesan cheese, beaten egg, salt, and black pepper until well combined. Let the mixture cool to room temperature.

Prepare Filling

    Cook the Meat

    In the same skillet, heat olive oil over medium heat. Add ground meat, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.

    Add Peas

    Stir in the frozen peas and cook for an additional 2-3 minutes until warmed through. Remove from heat and let cool.

    Add Stracciatella

    Once the meat and pea mixture has cooled, stir in the stracciatella cheese until well combined.

Form Arancini

    Shape the Rice Balls

    Take a handful of the rice mixture and flatten it in your palm. Place a spoonful of the meat and pea filling in the center, then mold the rice around the filling to form a ball. Repeat until all the mixture is used.

Coat and Fry

    Prepare Coatings

    Set up a breading station with one bowl of all-purpose flour, one bowl with beaten eggs, and one bowl with breadcrumbs.

    Bread the Arancini

    Roll each rice ball in flour, dip into the beaten eggs, and coat with breadcrumbs, ensuring they are well covered.

    Heat Oil for Frying

    In a deep skillet or pot, heat oil over medium heat until it reaches 350°F (175°C).

    Fry the Arancini

    Carefully add the breaded rice balls to the hot oil in batches, frying until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.
