Swordfish Skewers

Prepare the Swordfish
Cut the swordfish steaks into 1-inch cubes. Place them in a bowl.

Marinate the Swordfish
In the bowl with swordfish, add olive oil, lemon juice, minced garlic, paprika, salt, and black pepper. Mix well to coat all pieces. Cover and let marinate in the refrigerator for at least 30 minutes.

Soak Skewers
If using wooden skewers, soak them in water for at least 15 minutes to prevent burning during grilling.

Skewer the Fish
Thread the marinated swordfish cubes onto the soaked skewers, leaving a little space between each piece.
Agristada Sauce

Prepare the Vegetables
In a medium bowl, combine the diced tomatoes, finely chopped red onion, chopped parsley, and chopped mint.

Make the Sauce
Add olive oil, red wine vinegar, salt, and black pepper to the vegetable mixture. Toss well until everything is evenly combined. Set aside to let the flavors meld.
Herb Salad

Prepare the Salad
In a large bowl, combine the mixed greens, sliced cucumber, and halved cherry tomatoes.

Dress the Salad
Drizzle olive oil and lemon juice over the salad. Season with salt and black pepper. Toss gently to combine.

Serve
Remove the skewers from the grill and let rest for a couple of minutes. Serve the swordfish skewers with agristada sauce drizzled on top and herb salad on the side.
