Mushroom Shishlik

Pickled Cucumber

Method

Mushroom Shishlik

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, minced garlic, chopped parsley, lemon juice, salt, and black pepper. Mix well.

  2. 2

    Marinate the Mushrooms

Add the oyster mushrooms to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes.

  3. 3

    Prepare the Skewers

Soak wooden skewers in water for 15 minutes to prevent burning. Then, thread the marinated mushrooms onto the skewers.

  4. 4

    Grill the Shishlik

Preheat the grill to medium-high heat. Grill the mushroom skewers for about 10-15 minutes, turning occasionally, until they are golden and tender.

Pickled Cucumber

  1. 5

    Prepare the Brine

In a saucepan, combine white vinegar, water, sugar, salt, smashed garlic, dill sprigs, mustard seeds, and black peppercorns. Bring to a boil, then let it simmer for 5 minutes.

  2. 6

    Pickle the Cucumbers

In a clean jar, layer the sliced cucumbers and pour the hot brine over them. Ensure the cucumbers are fully submerged.

  3. 7

    Cool and Refrigerate

Let the jar cool to room temperature, then cover and refrigerate for at least 24 hours before serving to allow the flavors to meld.
