Prepare the Lamb Mixture
In a large bowl, combine the ground lamb, finely chopped pistachios, minced black garlic, chopped red onion, and chopped parsley.

Season the Mixture
Add cumin powder, paprika, salt, black pepper, and olive oil to the lamb mixture. Mix well until all ingredients are evenly incorporated.

Shape the Kebabs
Divide the mixture into equal portions and shape each portion around the soaked skewers, pressing firmly to ensure they hold together.

Cook the Kebabs
Preheat a grill or grill pan over medium-high heat. Cook the kebabs for about 10-12 minutes, turning occasionally, until they are cooked through and have a nice char.

Prepare the Black Garlic
In a food processor, add the peeled black garlic cloves and blend until smooth.

Add Egg White and Lemon Juice
Add the egg white and lemon juice to the food processor and blend until well combined.

Emulsify the Mixture
With the food processor running, slowly drizzle in the vegetable oil. Continue blending until the mixture is thick and creamy. Season with salt to taste.

Serve
Transfer the black garlic toum to a serving bowl and serve alongside the lamb kebabs.
