    Prepare the Lamb

    Begin by trimming any excess fat from the lamb tenderloin. Wrap the tenderloin tightly in plastic wrap and freeze for about 1 hour, or until firm but not completely frozen. This will make it easier to slice thinly.

    Slice the Lamb

    Once the lamb is firm, remove it from the freezer. Using a sharp knife, slice the lamb as thinly as possible. Aim for slices around 1/8 inch thick. Arrange the slices on a chilled platter in an overlapping pattern.

    Prepare the Smoked Tomatoes

    If you are using store-bought smoked tomatoes, ensure they are drained and chopped into smaller pieces. If you are making them from scratch, smoke halved tomatoes over wood chips until they are soft and infused with smoke flavor, then chop.

    Assemble the Carpaccio

    Drizzle the olive oil over the arranged lamb slices. Scatter the smoked tomatoes evenly over the lamb. Sprinkle sumac over the top, followed by fresh parsley, sea salt, and freshly cracked black pepper to taste.
