Hummus

Laffa Bread

Method

Hummus

  1. 1

    Prepare Chickpeas

Drain and rinse the canned chickpeas under cold water. Set aside.

  2. 2

    Blend Ingredients

In a food processor, combine the drained chickpeas, tahini, lemon juice, garlic cloves, olive oil, ground cumin, and salt.

  3. 3

    Process Until Smooth

Blend the mixture until smooth. If the hummus is too thick, add water one tablespoon at a time until desired consistency is reached.

  4. 4

    Serve

Transfer the hummus to a serving bowl, drizzle with extra olive oil, and sprinkle paprika on top. Serve with laffa bread.

Laffa Bread

  1. 5

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, instant yeast, and salt.

  2. 6

    Add Water and Oil

Gradually add warm water and olive oil to the dry ingredients. Mix until a dough forms.

  3. 7

    Knead Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 8

    Let Dough Rise

Place the kneaded dough in a greased bowl, cover with a cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

  5. 9

    Shape Laffa

Once risen, punch down the dough and divide it into 6 equal pieces. Roll each piece into a flat, round disc approximately ¼ inch thick.

  6. 10

    Cook Laffa

Heat a skillet or griddle over medium-high heat. Cook each disc for about 2-3 minutes on each side until they puff up and develop golden spots.

  7. 11

    Serve

Wrap the cooked laffa bread in a clean cloth to keep warm. Serve with hummus.
