Method

Chicken Shishlik

  1. 1

    Marinate the Chicken

In a large bowl, combine olive oil, minced garlic, paprika, cumin, salt, black pepper, and lemon juice. Mix well.

  2. 2

    Prepare the Chicken

Cut the chicken breast into 1-inch cubes and add to the marinade. Toss to coat evenly. Cover and refrigerate for at least 1 hour or overnight for more flavor.

  3. 3

    Skewer the Chicken

Thread the marinated chicken onto skewers, leaving a little space between each piece.

  4. 4

    Grill the Chicken

Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Apple Amba

  1. 5

    Cook the Apples

In a saucepan, combine diced apples, vinegar, chopped cilantro, salt, turmeric, and chili powder. Bring to a boil over medium heat.

  2. 6

    Simmer the Mixture

Reduce heat and let it simmer for about 15-20 minutes until the apples are soft and the mixture thickens.

  3. 7

    Cool and Serve

Let the amba cool before serving. It can be stored in the refrigerator for up to a week.

Gribenes Dukkah

  1. 8

    Prepare Gribenes

In a skillet, cook the diced chicken skin over medium heat until crispy. Remove and drain on paper towels.

  2. 9

    Toast Nuts and Seeds

In the same skillet, toast the hazelnuts, sesame seeds, coriander seeds, and cumin seeds until fragrant.

  3. 10

    Combine and Blend

In a food processor, combine gribenes, toasted nuts, and seeds with salt. Pulse until mixed but still slightly chunky.

Roasted Radish

  1. 11

    Prep the Radishes

Preheat your oven to 200°C (400°F). In a bowl, toss halved radishes with olive oil, salt, and black pepper.

  2. 12

    Roast the Radishes

Spread the radishes on a baking sheet in a single layer. Roast for 20-25 minutes until tender and slightly caramelized.
