Directions

  1. 1

    Prepare the Brussels Sprouts

Start by preheating your oven to 425°F (220°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut the Brussels sprouts in half lengthwise.

  2. 2

    Season the Brussels Sprouts

In a large mixing bowl, combine the halved Brussels sprouts with olive oil, salt, and black pepper. Toss well to ensure that all the sprouts are evenly coated.

  3. 3

    Roast the Brussels Sprouts

Spread the seasoned Brussels sprouts on a baking sheet in a single layer, cut side down. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy on the outside, stirring halfway through for even cooking.

  4. 4

    Toast the Pine Nuts

While the Brussels sprouts are roasting, heat a small skillet over medium heat. Add the Turkish pine nuts and toast them for about 3-5 minutes, stirring frequently until they are golden and fragrant. Remove from heat and set aside.

  5. 5

    Add Garlic and Balsamic

In the last 5 minutes of roasting the Brussels sprouts, add minced garlic and balsamic vinegar to the baking sheet. Toss the Brussels sprouts to combine and return to the oven for the final roasting.

  6. 6

    Serve

Once the Brussels sprouts are caramelized and tender, remove them from the oven. Transfer to a serving dish, sprinkle toasted pine nuts on top, and finish with grated Parmesan cheese. Serve warm.
