Bring water to boil
Place 6 cups of water and 1 tablespoon kosher salt in a medium saucepan. Bring to a rolling boil over high heat.

Cook edamame
Add 2 cups frozen edamame (shelled or in pods) to the boiling water. Return to a boil, then reduce heat slightly to maintain a gentle boil. Cook shelled edamame 3–4 minutes until tender and bright green; cook edamame in pods 4–5 minutes until pods are tender but still slightly firm. Do not overcook — they should be just tender.

Shock and drain
Immediately drain the edamame in a colander and, if using shelled edamame, rinse briefly under cold running water or transfer to an ice bath to stop cooking. If using pods, you can also rinse briefly. Drain well and return to the colander or a bowl.

Dress edamame
While still warm, transfer drained edamame (shelled or in pods) to a mixing bowl. Drizzle 1 teaspoon toasted sesame oil over them and toss to coat evenly.

Season
Sprinkle 1 teaspoon flaky finishing salt (or to taste), 1 teaspoon freshly ground black pepper, and 1/4 teaspoon red pepper flakes if using. If you like brightness, squeeze about 1/2 tablespoon lemon or lime juice over the edamame and toss again. Taste and adjust seasoning.

Serve
Serve warm or at room temperature. If serving pods, provide a small bowl for discarded pods and a pinch bowl of extra salt. If serving shelled edamame, serve as a snack or as a salad/topping component.
