Preparing the Pudding

1. Make the Mango Base

In a blender, combine the mango puree, coconut milk, sugar, cornstarch, vanilla extract, and a pinch of salt. Blend until smooth.

2. Cook the Pudding

Pour the mango mixture into a saucepan over medium heat. Stir continuously until the mixture thickens, about 5-7 minutes.

3. Cool the Pudding

Once thickened, remove from heat and allow the pudding to cool at room temperature for 10 minutes. Then, transfer it to the refrigerator to chill for at least 1 hour.

4. Prepare the Toppings

While the pudding is chilling, slice the fresh mango into thin pieces and set aside. Chop the mint leaves finely.

5. Serve

Once the pudding is cold, scoop it into serving bowls. Top with fresh mango slices and a sprinkle of chopped mint leaves before serving.
