cook vegetables
Heat 1 tablespoon olive oil in a large nonstick or cast-iron skillet over medium-high heat. Add diced onion and bell pepper and cook, stirring, until softened and starting to brown, about 4 minutes. Push to one side of the pan.

Add remaining 1 tablespoon olive oil to the empty side of the skillet and spread the parboiled potatoes in an even layer. Let them sit undisturbed for 3–4 minutes to develop a brown crust, then stir and continue to cook 6–8 minutes, turning occasionally, until potatoes are golden and crisp. Stir vegetables back together with potatoes. Season with smoked paprika, garlic powder, ¾ tsp salt, and ½ tsp black pepper. Keep warm on very low heat or transfer to a warm oven (200°F / 90°C).

Heat a large skillet over medium heat and add 1 tsp vegetable oil. Add the 3 breakfast sausage links and cook, turning occasionally, about 10–12 minutes, until browned on all sides and cooked through (internal temperature 160°F / 71°C). Remove to a plate and cover loosely with foil to keep warm.

heat ham
In the residual fat or a clean small skillet over medium, add ham slices and sear 30–60 seconds per side until warmed and lightly caramelized. Keep warm with the other meats.

Heat a nonstick skillet over medium-low heat and add 1 tbsp unsalted butter. Crack 3 eggs into a small bowl (or one at a time) and slide into the skillet. Season with 1 tsp salt and ½ tsp black pepper. For sunny-side-up: cook gently until whites are set but yolks still runny, about 4–5 minutes; cover the pan for the last 30–60 seconds if you prefer the tops set. For over-easy: cook until whites set, flip carefully and cook 15–30 seconds more. For scrambled: whisk eggs before cooking and pour into melted butter; gently fold until soft curds form, about 2–3 minutes. Keep eggs warm.
Toast & Plating

Toast 2 slices of bread to desired doneness in a toaster or under the broiler. Spread 1 tbsp butter over warm toast.

On a large plate arrange the home fries (about 1 to 1 1/2 cups), place the 3 sausages, 3 bacon strips, and warmed ham slices beside the potatoes. Add the 3 eggs on the plate (or on top of the potatoes). Place the two buttered toast slices on the side. Garnish the potatoes or eggs with chopped parsley, if using. Serve immediately with ketchup, hot sauce, or syrup on the side as desired.
