    Prepare the glass

    Choose a highball or tall glass (10–12 oz). Rub the lime wedge around the outside rim of the glass, then dip the rim into a shallow plate with the coarse sea salt or celery salt to coat. Set the glass aside.

    Fill with ice

    Fill the salted glass with ice cubes, leaving room at the top for mixing (about 1 cup of ice).

    Combine ingredients

    In the glass (or a separate mixing glass), pour 1.5 oz vodka, 6 oz Clamato juice, 0.5 oz fresh lime juice, 2 tsp Worcestershire sauce, and 3 dashes hot sauce over the ice. Add 0.25 tsp celery salt and 2 grinds of freshly ground black pepper.

    Stir and taste

    Stir the mixture gently with a bar spoon or long spoon for about 10–15 seconds to combine. Taste and adjust seasoning: add more hot sauce for heat, more Worcestershire for umami, or an extra squeeze of lime for brightness.

    Garnish and serve

    Garnish with a fresh celery stalk and a lime wedge on the rim. Optionally add a cooked bacon strip and a pickled item (bean, olive, or prawn) skewered on a cocktail pick for a classic presentation. Serve immediately. Note: Caesars are best enjoyed fresh and are available until 3pm.
